This is another recipe from The Natural Nutrition No-Cook Book by Kymthy R. Schultze.

I know this does sound a lil' freaky 'cause its raw but its actually really nice and good for you too!
It's also great cause it doesn't take too long as you don't have to cook it!


The Raw Berry Pie

First is the recipe for the pie crust.
You need:

2 cups raw shelled nuts (pecans are good)


2 cups pitted dates


1/2 teaspoon cinnamon

Directions:
put these 3 ingredients in a food processor and chop into a coarse
meal.

Press firmly into a 9"- pie pan, coating the bottom and sides evenly. Refrigerate if not using immediately.

5 cups of your favourite in-season fruit.
Piecrust. (pie crust directions below)

Directions:

Wash the fruit and drain well.
Put half in a bowl and mash with a fork,
or use a food processor if the fruits very firm,
finely dice the remaning half (unless it is something
small like berries) and mix well with the mashed fruit.


add this mixture to the rest of the fruit

If the mixture isn't sweet enough stir in a little honey
(maple syrup would work well too).
You can add a little cinnamon to the mixture as well
as this will enhance the flavour
Pour into piecrust and then ontop of the fruit mix
put extra pie crust to cover it.
Decorrate with Pecans

nb: in the piecrust you can also add flax seeds when grinding the mixture.
